Sformato di zucchine ( senza nichel)

Porzioni: 4 persone

Ingredienti:

1 kg Zucchine
200 gr Ricotta
3 uova
20 gr Parmigiano
Farina di riso integrale q.b.
Olio di oliva extravergine q.b.
Sale
Pepe
Noce moscata

Istruzioni: 

Lavate e tagliate a fettine sottili le zucchine, mettetele in una pentola capiente e coprite con acqua. Salate e fate cuocere per 5 minuti dal momento della bollitura. Scolate quindi l’acqua e ungetele d’olio. Terminate la cottura a fuoco dolce.
A parte mescolate bene la ricotta con le uova, un pizzico di sale, pepe, noce moscata e il grana grattugiato. Quando le zucchine saranno cotte, frullatele e aggiungetele al composto. Versate il tutto in uno stampo da plumcake oliato e infarinato, livellate e fate cuocere in forno statico a 180° per 40 minuti circa. Fate intiepidire e sfornate.
